The ayurvedic dietetics is very different from our contemporary vision of the balanced, identical diet for all. To know the specific needs according to our constitution is the key to define an appropriate diet, to create least possible toxin, and take advantage at most of benefits of every food.
Establishing a well-balanced diet will vary according to seasons and will be made according to our doshic constitution and to the soil in which we live. The ayurvedic dietetics does not analyze food in terms of vitamins, and other components but by the science of six tastes (soft, acid, salty, pungent, bitter and astringent), very subtle, in which every natural food possesses a flavor, an energy (heating or cooling) and a post-digestive action, which determine its effect on the body but also on the consciousness. The food becomes thus a powerful tool of healing.

Âyurveda leans on first 2 principles: Prakriti, the principle of balance guarantor of a good health, which represents the native constitution or state of primary balance, and Vikriti, principle of imbalance leading to diseases. According to this thousand-year-old science, every individual possesses a constitution of birth determined from his conception and which forms the basis of the functioning of each individual at every level. This native constitution is the result of a unique alliance of the 5 elements, associated to a particular psychic constitution (governs by three basic energies: tamas, rajas, sattva) and to an essential physiological constitution (determined by the combination of three doshas, which cover the main metabolic functions of the body).
So, for Âyurveda, every individual is unique, and treated as such. In this complete medicinal system, every person is considered in his entirety, and his uniqueness, to determine why this person is « sick », in imbalance. Indeed, after a personalized âyurvedic balance diagnose, after determined where the source of imbalance is, the practitioner determines the type of treatment to set up, according to patient Prakriti, which implies to cure and look after the person, and not after the disease. We do not look after the symptoms, but after the source of the disease.
Indeed, the constitution of everyone is determined for life and constitutes his level of perfect balance. To maintain this physical and physiological state in balance, Âyurveda also takes into account the mental constitution. It is our native constitution that predisposes us to certain features physical and mental, so positive as negative. Âyurveda does not judge what is positive or negative.
